2 oranges1 lemon2 scallions (spring onions)1 handful of flat leaf parsley1 handful of toasted flaked almonds (to toast them yourself put them in a dry frying pan and toss them about for around 2 minutes. Watch them. The second you take your eye off them to answer the phone or put on a cd, they will burn)3 tbsp Olive oilSalt and pepper
Supreme the oranges LINK and squeeze the remaining juice into the bowl
Add the zest from half the lemon
Slice the scallions into thin coins and add them too
Chop the parsley as finely as you have the patience for and add to the bowl
Add the almonds
Season with a pinch of salt and pepper
Pour in the olive oil while mixing to bring everything together
Variations
Add 2 tbsp of chopped black olives
Or 2 tbsp of chopped green olives
Add 1tbsp of rinsed salted capers, 1tbsp chopped black or green olives and I clove of grated or very finely minced garlic
Use basil as well as parsley and use pine nuts instead of almonds
